Greek Turkey Meatball Sandwich

This Greek-inspired turkey meatball sandwich is a handful of comfort food! The meatballs include roasted peppers and the meatballs are paired with tomato sauce and tangy feta cheese.

Ingredients

The meatballs

  • 1 ¼ pound lean (93%) ground turkey meat
  • 1 roasted bell pepper finely chopped
  • ½ medium yellow onion grated
  • 2 garlic cloves minced
  • ¼ cup chopped flat-leaf parsley
  • 1 ½ teaspoons dried oregano
  • 1 large egg
  • ¼ cup plus 2 tablespoons dried breadcrumbs
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

The rest

  • 3 cups marinara sauce (your favorite kind)
  • 6 hoagie rolls preferably whole-wheat
  • ¼ cup crumbled myzithra or feta cheese

Instructions

The meatballs

  • Preheat oven to 350 degrees F. Thoroughly coat a large baking sheet with cooking spray.
  • In a large bowl, combine ground turkey, roasted red peppers, grated onion, garlic, parsley, dried oregano, egg, breadcrumbs, salt and pepper.
  • Mix well to combine. Using a rounded 2 tablespoon portion of the turkey mixture, form meatballs by rolling between the palms of your hands. Place the meatballs on the prepared baking sheet, spacing evenly.

The rest

  • In a large saucepan, heat your favorite marinara sauce over medium heat until simmering. Add meatball and stir to coat. Simmer until the sauce thickens slightly, stirring occasionally, about 15 minutes.
  • Preheat broiler. Place hoagie rolls on large baking sheet, divide the meatballs and sauce evenly on the bottom halves of the rolls and top each with 1 tablespoon myzithra (or feta) cheese. Broil for about 1 minute, or until the buns are slightly toasted. Serve.
