Trim any dark ends from the Brussels sprouts roots. Cut very small Brussels sprouts in half through the root and medium- to large-sized Brussels sprouts in quarters.
Place the cut Brussels sprouts in a medium-sized bowl. Toss with olive oil, garlic powder, salt and pepper until coated.
Preheat the air fryer to 370 degrees F. Add the Brussels sprouts to the air fryer basket. Cook at 370 degrees F until turning brown and tender when pierced with a fork, about 10 minutes, shaking the basket halfway through. If the Brussels sprouts aren’t quite done, cook for another couple of minutes.
In a small bowl, stir together the balsamic vinegar, maple syrup and Dijon mustard.
Transfer the Brussels sprouts a bowl. Drizzle the balsamic vinegar mixture on top and toss to coat. Serve immediately.
