Ham Tea Sandwiches with Mango Chutney

Ingredients

  • ½ pound baked ham cut into ½-inch pieces
  • 2 tablespoons mango chutney
  • ¼ cup grated sharp Cheddar cheese
  • ¼ cup light mayonnaise
  • ¼ teaspoon ground black pepper
  • cup chopped pecans
  • 2 green onions thinly sliced
  • 4 slices white sandwich bread
  • 4 slices wheat sandwich bread

Instructions

  • In the bowl of a food processor, puree ham, mango chutney, mayonnaise, cheddar cheese and freshly ground black pepper until mixture is almost smooth. Transfer the ham spread to a bowl and stir in chopped pecans and green onions.
  • Using 2 slices of white and 2 pieces of wheat sandwich bread, spread ¼ cup of the ham mixture on each slice. Cover with additional pieces of bread to form sandwiches. Cut the crusts off the sandwiches and cut each diagonally into 4 triangles. Serve.
