My favorite summertime grilling food - Grilled Shrimp Kabobs! These simple skewers take less than 20 minutes to make. Perfect for appetizers or dinner.
If using wooden skewers, soak them in warm water for at least 30 minutes.
Preheat the grill to medium heat. Lightly brush the grates with oil.
Place the shrimp in a large bowl and toss with 1 tablespoon olive oil, oregano, ½ teaspoon salt and pepper.
In a separate bowl, toss the cherry tomatoes and onion pieces with the remaining 1 teaspoon olive oil and ⅛ teaspoon salt.
Thread the shrimp onto the skewers, alternating with the tomatoes and onion pieces.
Grill until the shrimp are just cooked through and the tomatoes are starting to split, about 2 minutes per side. Squeeze the lemon over top and garnish with parsley.
