    Roasted Pepper Feta Yogurt Sauce

    Like any good food processor or blender sauce, this feta yogurt sauce is endlessly versatile (keep reading below for ideas). Plus, it can be made in about 5 minutes, making it ideal for last-minute entertaining, easy weeknight meals or quick snacks.

    As suggested by the name, the main ingredient for this Greek yogurt dip or sauce is roasted red peppers. You can buy jarred roasted peppers at most grocery stores or easily make them at home. Follow the tips in How to Roasted a Bell Pepper to make your own in minutes.

    Drizzle this roasted red pepper sauce on grilled chicken, shrimp or veggies, or use as a dip for raw vegetables. Super easy to make! 34 calories and 1 Weight Watchers Freestyle SP

    Roasted red peppers, feta cheese and Greek yogurt in a food processor.

    Throw the roasted peppers, feta, yogurt and garlic in the bowl of a food processor and puree until smooth. Next, drizzle in the olive oil, then season with salt and pepper. Last, stir in the fresh dill. If dill isn't your thing, feel free to substitute fresh basil, mint or oregano.

    I can truly say that anything I serve with this sauce is merely a vehicle to get the sauce from the bowl to my mouth. That being said, let's talk serving ideas.

    What to serve with roasted pepper yogurt sauce:

    • Check back tomorrow for the grilled shrimp kabobs that you see in the photo below. Grilled shrimp, lamb, chicken or fish all work beautifully with this yogurt feta sauce.
    • Use it as a dipping sauce for raw vegetables.
    • Grill some pita bread, cut it into wedges, then serve alongside this sauce. Dipping heaven!
    • Make a batch of chicken shawarma and serve it with this sauce, all tucked inside of warm pita bread.
    • Make a batch of baked zucchini fries and serve the roasted pepper sauce alongside the pesto yogurt sauce in the recipe. Extra sauce choices is always a good thing!
    • Use it as a dip for appetizer meatballs.
    • Serve it as a salad dressing - pasta salad, green salad, potato salad, cucumber salad...any will work.

    Ingredients

    • 2 roasted red peppers seeded (see How to Roast a Bell Pepper)
    • 3 tablespoons plain nonfat Greek yogurt
    • 3 tablespoons crumbled feta cheese
    • 1 garlic clove grated on microplane
    • 2 teaspoons extra virgin olive oil
    • ⅛ teaspoon kosher salt
    • ⅛ teaspoon ground pepper
    • 1 tablespoon minced fresh dill

    Instructions

    • Place the roasted pepper, yogurt, feta cheese and garlic in a food processor. Puree until smooth.
    • While the food processor is running, add the olive oil, salt and pepper. Puree to combine.
    • Add the dill. Pulse a few times. Transfer the sauce to a serving bowl. Serve.
