The first day of December means one thing in my family. We are finally allowed to sing and listen to Christmas carols. This family rule comes from my mum and has been carried on in our household. While it may seem somewhat arbitrary, the hope is to contain Christmas within the month of December to avoid watering down the joy and excitement of the season by beginning the celebration too early. But now December is here and that means we can celebrate with abandon, sing our favorite carols and bake with as much chocolate and peppermint as we can get our hands on. I pulled out the marshmallows, crushed the candy canes and Heath bars, doled out the coconut and set my boys to work on some holiday pops. These are perfect for neighbor gifts, classroom parties and afternoon snacking with a cup of hot chocolate.
After melting the chocolate and laying out the ingredients, I set my boys to work. Besides the one pop I demonstrated for them, my little chefs did every bit of work. Dipping, sprinkling, dipping, sprinkling…and finally eating. They were so proud of their work that they gathered up handfuls of the marshmallow pops and set off to deliver them to the neighbors. (I was pretty darn happy because having 35 of these gloriously chewy, sweet treats in the house was too bloody dangerous.) It was the perfect start of the holiday season – making something with our own hands and sharing with friends.
The recipe:
Insert lollipop sticks deep into the marshmallows, taking care not to poke them through the other side.
Place chocolate and shortening in a medium-sized microwave-proof bowl. Microwave on 50% power, stirring every 30 seconds, until melted and smooth.
Working with one marshmallow at a time, invert marshmallow and dip it into the chocolate until three-quarters of the marshmallow is coated. Tap the stick while holding the marshmallow over the bowl to get rid of excess chocolate.
Immediately sprinkle the chocolate coating with candy cane pieces, Heath Bar pieces or shredded coconut.
Poke the lollipop stick through a paper candy cup and push up to meet marshmallow.

Poke the sticks into a piece of florist’s styrofoam.
Let the chocolate dry. Eat!

I have fond memories baking with my Mom or helping my Dad on the grill or at the stove – and if not for them pretty sure I wouldn’t enjoy cooking like I do.
