    Every time I make muffins, I wonder why I don't do it more often. Whipping up a batch takes about 15 minutes of prep time and the adoration from my family lasts until the last muffin is eaten. Honestly, that takes about 24 hours until I squirrel some of them away. I've learned that making double, or even triple, batches of muffins is the way to go so that I freeze the extras for later. On busy school morning, that freezer stash is a godsend.

    Making healthy, whole wheat muffins isn't any more difficult than making any other kind of muffin. As long as you have a couple of key ingredients - whole wheat pastry flour, unsweetened applesauce, plain yogurt and maple syrup - on hand, you're good to go. Substituting applesauce and yogurt for butter and oil, and maple syrup for granulated sugar will give you fantastic results without the "cakelike" nutritional quality of some muffins.

    But let's get real, these muffins are really about the tart cherries and almonds tucked inside. The almonds lend a toasty crunch and the tart cherries, all puffy and plump when baked, add a fantastic sweet-tart flavor, not to mention a host of nutritional benefits.
