25 Corn Recipes from Food Bloggers

Summertime is bursting at the seams with fresh produce. There are so many to options to choose from – watermelon, zucchini, berries, tomatoes – and it’s tough to pick a favorite. However, I can honestly say that fresh corn, straight from my favorite farmstand, easily makes it into the top five. Considering that I buy 13 ears of corn at a time (I can’t resist that baker’s dozen) for a family of four, I have to think and work fast to use up the fresh ears of corn.

As much as I love gnawing on sweet corn straight from the cob (boiled or grilled), sometimes it’s fun to shake things up a little. That’s when I start perusing some of my favorite blogs for ideas. I quickly discovered that there are a ton of great corn recipes out there, and it’s virtually impossible to give you the best. So, here’s a list of some that caught my eye.

So sad that corn isn’t doing very well in Colorado this year thanks to the very hot and dry summer we’ve had – I’ve only gotten a single ear from my CSA and none of my friends’ gardens are producing. I’m drooling looking at all of these recipes!

I saw an amazing tip for shucking corn in the July Newsletter of Goebbert’s Farm & Garden Center in South Barrington, IL. I had to reduce the time to 3 minutes and the success is directly related to the freshness of the ear of corn. Here’s the link… http://www.youtube.com/watch?v=YnBF6bv4Oe4 It is preety cool.

Some seriously great corn recipes here, Dara. I’m fearful of the bad news I’ve heard about the corn crops this year because of how dry it’s been. Hopefully us corn lovers won’t suffer (and the farmers finances too, of course)

Here’s an easy sweet corn and green pea ravioli made with wonton wrappers – so it’s super easy :)

Also, I absolutely LOVE raw sweet corn! I remove it from the cob (don’t throw the cobs away – they make great stock!) and toss those juicy sweet kernels into everything! Pastas, soups, salads, quiche with fresh sliced tomato and sauteed leeks. Yum!

I need some dessert recipes with corn, I think. They had to use corn as a dessert ingredient on Masterchef recently and I thought it was a great idea since it’s actually too sweet for me to enjoy as a vegetable.
