3-Ingredient Healthy Chocolate Fudge Pots Recipe
When Valentine’s Day rolls around each year, my husband and I always toss around the idea of heading out to a restaurant to celebrate the occasion. And every year, we ultimately decide to spend the evening at home with our boys, enjoying a special home cooked meal for four, complete with flowers and candlelight.
Since we tend to veer more towards savory rather than sweet dishes around here – and Valentine’s Day always falls smack dab in the middle of Boston Marathon training season for my husband (healthy foods rule the day!) – we typically indulge in something simple, such as chocolate covered strawberries.
But this year I decided to stray from my usual dessert comfort zone and come up with a recipe that even the healthiest eaters in the house couldn’t resist. Believe it or not, these healthy chocolate fudge pots only require three ingredients, but are so rich and lusciously chocolate-y that they’re perfect for a Valentine’s Day celebration.
Part of the fun of celebrating the occasion at home is decorating the table with Valentine’s-inspired flowers and décor. When I headed to my local Safeway to pick up the ingredients for the chocolate fudge dessert, I made a detour into the floral section to see what I could find. So many amazing options!
The awesome floral manager (thank you, Melissa!) helped me pick out one of the debi lilly design™ collection vases, which are available in the Seattle area exclusively at Safeway and Albertsons stores. I couldn’t resist the Fade In collection vase that you see above and the cute alphabet candles (of course I picked out ones with my husband’s and my initials).
Melissa showed me several flower options and we chose some beautiful peach-tinged white roses, which she then arranged in the vase I picked out, using one of the debi lilly design arrangements. Perfect for our Valentine’s table (and affordable)! And let me tell you, those flowers are still as fresh as can be, even a week after I bought them.
If you prefer to use a vase you have at home, you could choose one of the colorful debi lilly design “chop and drop” bouquets that are available. The bouquets are pre-arranged, so you just have to cut the stems to the appropriate length for your vase and slide them in. So easy!
How to make the healthy chocolate fudge pots:
- The three ingredients required are full fat coconut milk, O Organics® unsweetened chocolate and pitted dates.
- Place the can of coconut milk in the fridge for at least 6 hours or in the freezer for 1 hour before making the recipe. Do not shake the can or turn it upside down.
- Open the coconut milk can and scoop out the thick coconut cream. This is what you’ll be using for the recipe. Reserve the coconut water for another use, such as making smoothies.
- Puree the dates and coconut cream in a food processor until very smooth.
- Melt the chocolate in a double boiler (a bowl set over simmering water), then add to the food processor and puree.
- Transfer to serving dishes. Either serve at room temperature or place in the fridge for several hours for a fudgier texture.
- One “pot” will feed two people because they are quite rich.

3-Ingredient Healthy Chocolate Fudge Pots
Ingredients
- 1 can full fat coconut milk
- 10 pitted dates
- 4 ounces O Organics unsweetened chocolate chopped
Instructions
- Place the can of coconut milk in the fridge for at least 6 hours or in the freezer for 1 hour before making the recipe. Do not shake the can or turn it upside down.
- Open the can of coconut milk, scoop out the coconut cream and transfer it to a food processor. Reserve the coconut water for another use.
- Add the dates and puree until smooth, scraping down the sides as necessary. This will take several minutes.
- Create a double boiler by placing a glass or metal bowl over a pot of simmering water. The water should not touch the bottom of the bowl. Stir until the chocolate is melted. Carefully wipe the water droplets off of the bottom of the bowl, then scrape the chocolate into the food processor. Puree until completely combined.
- Transfer the mixture to two ramekins or small glass dessert bowls.
- If you prefer a softer texture, serve right away at room temperature. For a more solid, fudgier texture, cover and place in the fridge for 2 hours.
- Top with fresh fruit and/or whipped coconut cream. Serve.
