- Parsley: Chopped flat-leaf parsley. I often swap in cilantro.
- Lime juice: Use fresh lime juice to add brightness.

Easy Three Bean Soup
Ingredients
- 2 teaspoons olive oil
- ½ medium yellow onion chopped
- 1 large celery stalk chopped
- 1 red bell pepper diced
- ½ teaspoon kosher salt divided
- ½ teaspoon ground black pepper divided
- 3 garlic cloves minced
- 1 ¼ teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 cups vegetable broth (See Note 1)
- 1 (14 ounce) can black beans drained and rinsed
- 1 (14 ounce) can cannellini beans drained and rinsed (See Note 2)
- 1 (14 ounce) can red kidney beans drained and rinsed
- 1 (10 ounce) can Rotel (See Note 3)
- 3 tablespoons minced flat-leaf parsley
- 1 tablespoon fresh lime juice
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large saucepan set over medium heat. Add the onions, celery and bell pepper. Season with ¼ teaspoon salt and ¼ teaspoon pepper. Cook, stirring occasionally, until the onion is translucent, about 7 to 8 minutes.
- Add the garlic, smoked paprika, cumin, thyme, bay leaf and remaining ¼ teaspoon salt and ¼ teaspoon pepper. Cook for 1 minute.
- Pour in the broth, all of the beans and the Rotel. Bring to a boil, then reduce the heat to a lively simmer. Simmer for 15 minutes.
- Remove the bay leaf. Stir in the parsley and lime juice. Taste and adjust seasonings as desired. Serve.
