Before I moved to the U.S. from Canada, I knew one meaning of tailgating and it had nothing to do with food or sports. My driver's ed teacher taught me that tailgating meant that I was too close to the car in front of me and I needed to back to the heck off. Three seconds behind on city streets, five seconds on the highway.
Let me say that I like my newly understood meaning of tailgating much better than the one given by my disgruntled driving teacher. Tailgating is now all about pre-game parties, plenty of food and a libation or two. Even if you're not really into the football (or hockey!) game, eating good food, whether in a stadium parking lot or in a considerably cozier location (think couch and roaring fire) can make game day a whole lot of fun!
Tailgating food can range from burgers and ribs straight off the grill to wings and hand-held appetizers. And while there are usually several cheese-laden options involved, there's really no reason why you can't put a healthy spin on your tailgating spread. And unless you opt for nothing but green salads, I'll bet the rest of your party mates won't even notice that you're slipping some "healthy" into the feast.
Give them a couple of extra beers and you're really home free.
While I can appreciate a good burger as much as the next sports lover, what I really live for are the appetizers - dips, nibbles, whatever. If I get to taste a whole bunch of different things in one meal, a few botched plays by my team are far easier to handle.
So, tailgating or "cozy at home" football watching get-togethers usually involves a platter of veggies and pita chips, along with some of my favorite hummus flavors. If you haven't tried Sabra's Olive Tapenade Hummus or the Roasted Pine Nut Hummus, get ye to the store pronto! All of their hummus flavors are great for dipping or in recipes, such as some Greek Quinoa & Hummus Stuffed Tomatoes or Grilled Turkey Burgers with Curry Hummus.
Since I've done a fair bit of cooking with hummus, I wanted to experiment with Sabra's Greek yogurt dips. I pulled out the Farmer's Ranch flavor and mixed it with some diced chicken, celery, red bell pepper and a dash of hot sauce. If you are short on time, chop up some rotisserie chicken rather than cooking chicken breasts.
I've always loved making dessert egg rolls, such as my Baked Pumpkin Pie Egg Rolls (so good!) and decided to use the same technique with a savory dish. Believe me, this isn't hard. If you can roll up an enchilada, you can roll up an egg roll.
Pop the rolls in the oven for about 20 minutes, or until the egg roll wrappers are golden and a bit crispy. Serve the chicken ranch egg rolls alongside an extra dose of the ranch yogurt dip. I promise - these will disappear in a flash at your tailgating party!

Baked Chicken Ranch Yogurt Egg Rolls Recipe
Ingredients
- 1 teaspoon olive oil
- 12 ounces boneless skinless chicken breast, cut into ½-inch dice
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- ¼ cup Sabra Farmer's Ranch Greek yogurt dip
- ¼ red bell pepper diced
- 1 stalk celery diced
- 2 green onions thinly sliced
- 1 teaspoon hot sauce your favorite kind
- 10 square egg roll wrappers
- 1 egg
- 2 teaspoon water
- Sabra Farmer's Ranch Greek yogurt dip for serving
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and lightly coat it with cooking spray.
- Heat the olive oil in a large nonstick skillet set over medium-high heat. Add the chicken, salt and pepper, and sauté until the chicken is just cooked through.
- Transfer to a bowl and add the Greek yogurt dip, red bell pepper, celery, green onions and hot sauce. Stir to combine.
- Working with one egg roll wrapper at a time, lay the wrapper on a cutting board and brush the egg was around each edge.
- Scoop 2 rounded tablespoons of the chicken mixture onto one edge of the wrapper, leaving a small border.
- Fold in the sides and roll up the egg roll tightly. Place it on the prepared baking sheet.
- Repeat with the remaining wrappers and chicken filling.
- Bake until the egg rolls are golden brown, about 20 to 25 minutes.
- Serve with more of the Greek yogurt dip.
