Mediterranean Mini Phyllo Shells
I have a love-hate thing going on with the appetizer table at any given holiday party. There are so many tasty bits and bites in one small geographic area and I want to eat all of them! Stuffed mushrooms, shrimp, Brie phyllo turnovers (ahh, Brie), meatballs and healthy dips galore. Bring it on!
How the heck is one person supposed to come out the other side of that without gaining 20 pounds!?
Because of my love for all things little and edible, necessity dictated that I come up with a list of healthy appetizers and hors d’oeuvres that keep me satisfied, but don’t force me to undo the top button on my pants.
I love a vegetable platter with a bowl of good hummus as much as the next calorie-watching gal, but I wanted to shake things up a little.

Athens phyllo shells
There are always (ALWAYS!) several boxes of Athens mini fillo shells in my freezer. They are the ultimate ingredient to have on hand for last-minute, easy hors d’oeuvres and desserts. They’re already baked, so there’s no need to put them in the oven, unless you are serving a hot appetizer, such as these Mini Mushroom & Gorgonzola Bites.
Just pull the mini fillo shells out of the freezer about 10 minutes before using them and they’ll be ready to serve by the time you finish filling the shells. Easy, right?
Tips for making mini phyllo shells:
There are only 6 ingredients in these mini hummus and roasted pepper fillo bites, so use the best ingredients that you can find. A creamy flavorful hummus, a ripe crisp cucumber and smoky roasted red bell peppers.
You can buy roasted red peppers in the jar at the grocery store, but they are really easy to make at home if you’d prefer. Plus, the homemade ones are not soaked in oil like the store-bought ones. Follow my tutorial, How to: Roast a Bell Pepper for the homemade version.
Are phyllo hummus cups healthy?
Remember how I mentioned that these are healthier than your average cocktail party hors d’oeuvres? There are only 67 calories and 0.9 grams of saturated fat for TWO of these little bites. Now that’s a reason to celebrate!

Ingredients
- 30 Athens mini fillo shells 2 boxes, defrosted
- 3/4 cup + 3 tablespoons hummus I use Sabra
- 1/2 cup diced English cucumber
- 1 roasted red pepper 2 halves, diced
- 1 1/4 ounces 1/4 cup crumbled feta cheese
- 2 tablespoons minced flat-leaf parsley
Instructions
- Fill each mini fillo shell with 1 ½ teaspoon hummus.
- Divide the cucumber, roasted red pepper, feta cheese and parsley evenly between the fillo shells. Serve.

Can you make these the day before?? Or will they get soggy?

I’ve never made them the day before, but I think they would go soggy. For a make-ahead option, you could chop all of the vegetables the day before, then simply assemble before serving. Once you get on a role, they don’t take long to put together.

How far in advance would you safely recommend filling the cups? I’ve got a three hour drive and was going to assemble them right before I leave while keeping them in the cooler during the drive. Wouldn’t want them to get mushy! Thanks!
