Well, I successfully dodged the Carl’s Jr. bullet. My husband was heading out for a well-deserved boys’ night with some of his buddies while I stayed at home with the two smaller boys. I decided to treat them to a kid’s meal from Carl’s Jr. (we had coupons – what can I say?) and I suppose I easily could have indulged in a fat & juicy six-dollar burger. However, I have managed never to eat at Carl’s Jr. and, after their commercial with a scantily-clad Paris Hilton slip-sliding all over a sedan with a burger in hand, I pretty much lost any desire to break my streak. I guess I’m out of the running to be Paris’ BFF. Darn it!
Preheat the oven to 400 degrees F.
Heat 2 tablespoon of olive oil in a medium skillet over medium-high heat. Add 1 cup crookneck or yellow squash and 1 cup zucchini, cut into 1/2-inch pieces, and 2/3 cup chopped tomato.
Season with 1/2 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Stir in 4 teaspoons of capers.
Sauté for 3-4 minutes, or until the vegetables are just tender.
Remove the skillet from the heat and stir in 4 large fresh basil leaves, chiffonaded, and 1/3 cup bocconcini (mini mozzarella balls) or fresh mozzarella cut into 1/2-inch pieces.
Divide the vegetable mixture between two ramekins. Crack two eggs into each ramekin, taking care not to break the yolks. I didn’t follow my own directions very well, did I?
Place the ramekins on a baking sheet and place in the oven. Bake until the whites are almost cooked. Sprinkle each serving with 2 tablespoons freshly grated Parmesan cheese. Bake for 2 additional minutes, or until the white are cooked and the yolks are still soft.
Sprinkle each serving with chiffonaded fresh basil and serve immediately.

I gave up on Carl's Jr. Several years ago. I used to get their criss-cut fries all the time. Eek!
The baked egg on top looks really delicious on top of those veggies. It's like break thru it an find the veggie prize underneath. Yum!!
Tasty Eats At Home
The last time I remember eating Carls Jr it was pretty good, but that was probably 5-6 years ago, at least. My tastes have changed since then, and I definitely believe I would choose this dish over a greasy burger. I love baked eggs, and this sounds so perfectly fresh, but savory with the addition of the parmesan. Lovely!
