Add these awesome Baked Sweet Potato Tuna Patties to your weekly menu. They will blow away an notion of what you thought tuna patties should be!
We've managed to do the ol' bob and weave to avoid the inevitable onslaught of Christmas cookies and candies. I'm taking this time to map out my plan for when friends and neighbors started dropping by plates and tins of holiday treats. Most of the treats are simply too good to resist. There has to be some sampling, or I will quickly turn from "lover of all-things-Christmas" to bitter elf.
The battle plan is simple. There will be fruits and vegetables (lots of them), there will be gallons of water and herbal tea (my munchies busters) and there will be plenty of healthy recipes. I have all of my favorites lined up, such as Slow Cooker Hoisin Chicken (we make this at least twice a month), Easy Braised Balsamic & Herb Chicken (one of my favorites) and Easy Rice Bowls with Black Beans, Avocado & Cilantro Dressing (I could drink this dressing!).
And now I'm adding these Baked Sweet Potato Tuna Patties to the list.
I wish I could claim full ownership of this recipe, but the real credit goes to Olivia of Primavera Kitchen. This week, I featured her recipe on The Pioneer Woman’s Tasty Kitchen blog and, let me tell you, these are not your everyday tuna patties. They're tender, flavorful and healthy, thanks to both the ingredients list and the cooking method. And there isn't a single teaspoon of mayo in these patties.
There are so many fantastic recipes on Primavera Kitchen and I encourage you to pop over there to check it out. Some of the recipes that caught my eye are Pasta Soup with Sweet Potato & Peas, Cashew Butter Cookies with Cranberry & Chocolate Chips and Eggplant Pizza Bites.
But first, you have to try these patties. They are too good to pass up.

Sweet potato and tuna are wonderful together. I also love Oasis fat free roasted red pepper hummus only 28 calories in two tabs. with this as well. It also gave me the idea of adding tuna over a sweet potato using some of the ingredients in the recipe in the tuna, plus one of the varieties of the Oasis brand fat free hummus.) A market near me that has "natural " foods has this product that I love. Thanks for this recipe that will be made again and again.
