Thai Curry Grilled Pork Chops Recipe
Grilled pork chops became one of our favorite summertime meals a couple of years ago. It took this Grilled Pineapple Chili Pork Chops recipe to sweep away any childhood memories of dried pork. After I served that recipe, my boys actually starting requesting pork chops on the grill, which led to versions with peach salsa and with a Greek salad-inspired salsa.
As long as you have a good pork chop marinade or plenty of herbs, salt and pepper, there's not much you can do to ruin this economical cut of meat. That being said, there are a couple of simple tricks that make the difference between "Never again!" and "Make it again, Mum!"
Marinade for Grilled Pork Chops:
- Pork chops lend themselves to different flavors easily, making it easy to keep things interesting even if you serve them regularly.
- For this marinade, I briefly sauté coconut oil with some Thai red curry paste, then stir in some coconut milk until the mixture is smooth. All of those ingredients can be found in most grocery stores. If your grocery store doesn't carry them, buy them on Amazon here, here and here (affiliate links).
- Other favorite marinade options? 1) Italian: Red wine vinegar, olive oil, dried oregano, salt and pepper and 2) Asian-inspired: Soy sauce, rice vinegar, garlic and ginger.
- In this recipe, I marinated the pork chops for 30 minutes, but you can marinate for longer to impart even more flavor if you have the time.
How long to grill pork chops:
- The beauty of grilling pork chops is that they take mere minutes!
- For ½-inch thick chops on a grill set to medium heat, grill the meat on the first side for about 3 minutes. Flip and grill for another 2 minutes, or until the pork chops are just cooked through.
- The internal temperature should be 145 degrees F. Take care not to rest the thermometer on the bone, otherwise the reading will be inaccurate.
- Remember that the porks chops, like any meat, will continue to cook for a few minutes once removed from the grill. In other words, don't overcook them otherwise they will dry out.

Thai Curry Grilled Pork Chops
Ingredients
- 2 teaspoon coconut oil
- 1 tablespoon Thai red curry paste
- 2 garlic cloves minced
- ¼ cup lite coconut milk well-shaken
- 4 ½-inch thick bone-in pork chops
- ½ teaspoon kosher salt
- ½ teaspoon ground pepper
- juice of ½ lime
Instructions
- Heat the coconut oil in a small skillet set over medium heat. Stir in the curry paste and garlic. Cook, stirring, until the mixture starts to darken. Pour in the coconut milk and whisk until smooth.
- Season the pork chops on both sides with salt and pepper. Place in a baking dish. Pour the coconut milk mixture over the pork and toss to coat. Let rest for 30 minutes.
- Preheat the grill to medium. Light coat the grill with oil.
- Place the pork chops on the grill. Cook for 3 minutes on the first side, flip and cook until the pork chops are just cooked through, about 2 minutes. Squeeze the lime juice over the pork chops.
- Serve.
