Smoked salmon is a favorite at our house, and any sort of breakfast hash recipe is always welcome for a lazy weekend breakfast. So, it only makes sense to put the two of them together for a breakfast hash to beat all others.
I’ll be honest – the skillet didn’t even make it over to the table. As soon as my family got wind that there was smoked salmon in the house, they all made their way to the kitchen, tout de suite. I pretended that they were there to keep me company, but I knew the real reason for their sudden appearance. As soon as the hash was ready, in they dove with their forks!
This isn’t the first breakfast hash recipe on Cookin’ Canuck. In fact, there are a few versions, with the all-time winner being the Sweet Potato Hash with Creamy Avocado Sauce. I prepared this smoked salmon version using the same method – cooking the diced potatoes in boiling water first, then browning them in the skillet. Cast iron skillets (like my favorite one) produce the best crust on the potatoes but, really, any skillet will do.
While you could use lox in this recipe with great results, I prefer to use the large, chunky pieces of smoked salmon, like you see in the photo above. The texture holds up really well to the potatoes and the flavor is just as perfectly smoky as lox.
