We've managed to do the ol' bob and weave to avoid the inevitable onslaught of Christmas cookies and candies. I'm taking this time to map out my plan for when friends and neighbors started dropping by plates and tins of holiday treats. Most of the treats are simply too good to resist. There has to be some sampling, or I will quickly turn from "lover of all-things-Christmas" to bitter elf.
The battle plan is simple. There will be fruits and vegetables (lots of them), there will be gallons of water and herbal tea (my munchies busters) and there will be plenty of healthy recipes. I have all of my favorites lined up, such as Slow Cooker Hoisin Chicken (we make this at least twice a month), Easy Braised Balsamic & Herb Chicken (one of my favorites) and Easy Rice Bowls with Black Beans, Avocado & Cilantro Dressing (I could drink this dressing!).
And now I'm adding these Baked Sweet Potato Tuna Patties to the list.

This week, I featured her recipe on The Pioneer Woman’s Tasty Kitchen blog and, let me tell you, these are not your everyday tuna patties. They're tender, flavorful and healthy, thanks to both the ingredients list and the cooking method. And there isn't a single teaspoon of mayo in these patties.
