These grilled Greek pork chops are marinated in a simple mixture of fresh lemon juice, herbs, garlic and olive oil, then tossed on the grill for about 5 minutes. They're flavorful, they're delicious and they're one of my go-to summertime meals because they take close to zero brain power to put together. 🙂

Tips for making these Greek pork chops:
The pork chops can either be marinated in a shallow dish or a resealable plastic bag. I prefer the bag because it allows me to massage the marinade into the pork chops.
Marinate the pork chops for a minimum of 30 minutes, but longer is better. If you have 4 hours to spare, I highly recommend letting the pork chops marinate for that long to allow the flavors to seep in as much as possible. Be sure to refrigerate the pork chops while they marinate.
The key to juicy pork chops is to cook JUST until they reach an internal temperature of 145 degrees F. Overcooking them will produce dry meat. No one likes dry chops!
How to long to grill pork chops:
This recipe calls for ½-inch thick bone-in pork chops, which cook very quickly. The USDA recommends an internal temperature of 145 degrees F for pork chops. Over medium heat, it should take 2 to 3 minutes per side to grill the chops.
For thicker pork chops, allow for additional cooking time. Keep a meat thermometer on hand and insert it into the thickest part of the pork chop to measure the internal temperature.

Fresh lemon juice (this hand-held juicer is my favorite! – affiliate), lemon zest, olive oil, fresh mint and parsley, garlic and salt. Super simple!

Grilled Greek Pork Chops Recipe
Ingredients
- ¼ cup fresh lemon juice
- 3 tablespoons olive oil
- 1 tablespoon lemon zest
- 4 garlic cloves minced
- 4 mint leaves chopped
- 3 tablespoons minced flat-leaf parsley
- 2 teaspoons dried oregano
- ¾ teaspoon kosher salt
- 4 (5 oz. each) ½-inch thick bone-in pork chops
Instructions
- In a small bowl, whisk together the lemon juice, olive oil, lemon zest, garlic, mint, parsley, oregano and salt.
- Place the pork chops in a large resealable plastic bag. Pour the lemon juice mixture over the pork chops, close the bag and massage the marinade into the pork chops.
- Marinate in the refrigerator for at least 30 minutes and up to 4 hours.
- Preheat the grill to medium heat. Lightly oil the grill.
- Remove the pork chops from the marinade and place on the grill. Discard the marinade.
- Cook for 3 minutes on the first side, flip and cook until the pork chops reach 145 degrees F, about 2 additional minutes.
