Prosciutto & Goat Cheese Cucumber Appetizers Recipe
Whatever your next get-together is...New Year's Eve, a dinner party with friends or an appetizers-for-dinner night with the family (hey, that could be a thing!), these prosciutto and goat cheese cucumber appetizers are always popular. If you've been here before, you know I'm a fan of sweet and savory appetizers, like my Brie & Cranberry Potato Bites or sticky sweet crockpot meatballs. These easy cucumber bites fit in with the crew perfectly!
A couple of years ago, I posted my smoked salmon cucumber appetizers and you guys went crazy for them. I figured it was high time to whip up another version, just in time to serve alongside some Cranberry Prosecco Cocktails on New Year's Eve.
What you need for these cucumber appetizers:
- Cucumber: Of course! I suggest using English/European cucumbers for this recipe - the ones that are typically wrapped in plastic. Both their seeds and skin are more digestible than those of regular cucumber.
- Prosciutto: This is an Italian dry-cured ham that is sold either in the deli section (ask them to slice it for you) or pre-sliced and packaged. You'll need 6 slices of prosciutto, each cut into 4 pieces.
- Goat cheese: Specifically chevre, which is the soft goat cheese you find sold in logs in nearly every grocery store deli section.
- Fig preserves: Any type of fig jam or preserves will do, and if you have a Trader Joe's near you, you need to pick up a jar of their fig butter. It is brilliantly delicious! If you can't find a fig jam, opt for another type of fruit preserves, cranberry sauce or even pepper jelly.

Prosciutto & Goat Cheese Cucumber Appetizers
Ingredients
- 24 ¼-inch slices English cucumber, not peeled
- 2 ounces about ½ cup soft goat cheese (chevre)
- ¼ cup fig preserves or fig butter
- 3 ounces 6 slices prosciutto, cut into 24 pieces
- rosemary leaves for garnish
Instructions
- Top each cucumber slice with 1 teaspoon goat cheese and ½ teaspoon fig preserves or fig butter.
- Arrange a piece of prosciutto on top of each cucumber slice and garnish each one with a rosemary leaf.
- Serve.
