    1. Gina @ Running to the Kitchen

Love that you lightened up a comfort food staple like potatoes with healthy greens and cheese! Honestly, I'd rather a big bowl of this than buttery laden potatoes any day!

    2. Ashlyn @ Belle of the Kitchen

I love how you made these with kale and goat cheese! I'm always trying to incorporate kale into other recipes. And I must try those potoates! They look awesome!

    3. Maris (In Good Taste)

This looks great! What other kinds of potatoes could you use here? I've never seen Baby Boomer Creamer potatoes, though they sound wonderful!

    4. Michelle @ Blackberry Babe

Love this modern take on a classic dish! I'd love to see it on my Thanksgiving table. I love using Little Potato Company, they're great every time!

    5. Happy Valley Chow

A great twist on a classic! Sounds and looks delicious 🙂

    6. Lauren @ Hall Nesting

This sounds perfect to get my toddler to eat more greens and if it has cheese in it then I'm sure it will be a hit!

    7. Becca from ItsYummi.com

I see what you did here.... carb loaded goodness with a little extra green in there for "healthy" reasons. You're SO smart and sneaky!
Actually, this recipe is very much like Colcannon, which is popular in Ireland and on St. Patrick's Day. LOVE it!

    8. Kacey @ The Cookie Writer

I love working with the Little Potato Company and seeing all the creations from other bloggers! This is a wicked recipe, and I love the addition of goat cheese! Kale and goat cheese are favourites of mine, so in mashed potatoes I could only see this as a new love affair 🙂

    9. Maria

Love the addition of kale and goat cheese!

    10. Becki

This sounds wonderful. I have one kid that will eat kale and one that likes goat cheese but I suppose if they helped make it they would both realize that it all tastes delicious together!
