When my husband and I lived in New York City years ago, the Union Square farmer’s market in New York City seemed to be a landing place for every apple in the tri-state area. There was booth upon booth of apples of every variety, each farmer proudly proclaiming their fruit to be the best. Looking back, I wish I had this recipe at my fingertips when we sauntered back to our apartment with our haul of freshly picked apples.
Since I’m not much of a pie baker, I try to dream up other ways to cook with apples, such as crostini with goat cheese (okay, my son actually came up with this awesome little appetizer), healthy baked apples, one of my favorite spaghetti squash recipes and whole wheat muffins. They all have a healthy spin to them, and this whole wheat pancake recipe easily takes its place as one of our favorites.

Whole Wheat Apple Spice Pancakes
Ingredients
- 2 cups whole wheat pastry flour
- 2 tablespoons baking powder
- 1 ½ teaspoons ground cinnamon
- 1 teaspoons ground ginger
- ½ teaspoon salt
- 2 eggs
- 1 ½ cups nonfat milk or 2%
- 1 tablespoon pure maple syrup
- 2 Gala apples cored and grated
- ½ cup chopped pecans
For Serving:
- pure maple syrup
- fresh fruit
