I get a little nuts when it comes to sports. I was never a great athlete myself and I’m pretty sure that I shocked the heck out of my family and friends when I ran my first marathon.
“Dara’s running 26.2?! You mean 26.2 minutes, right?”
But when it comes to watching sports…well, I can get a little annoying.
In fact, as I’m writing this, I’m yelling…YELLING…at the U.S. team as they play Belgium in the World Cup. They can hear me from Brazil, right?
Holy cow…these boys are giving me a heart attack! The 37 typos that are bound to be in this post can be blamed solely on this nail-biter.
He was lying on the table for prime viewing, holding his breath with every move, via my Instagram.
We are so immersed in the World Cup games that I can barely wrap my brain around dreaming up menus for Canada Day (Happy belated Canada Day, all!) and Fourth of July barbecues. So, we’re going to have to keep it simple and light.
“Simple” because I will be sitting on the couch (okay, or jumping up and down) watching soccer.
“Light” because…well…I’ll be sitting on the couch watching soccer. The jumping around isn’t likely to burn enough calories to justify eating rack of ribs by myself, though my nerves will want me to nibble my through an entire pig.
So, “light” starts with this potato salad. We are ditching the mayo and replacing it with an easy Dijon vinaigrette. And let’s not forget the chopped red bell pepper and green onions for an added burst of color, flavor and vitamins.
That’s enough chit-chat. I have a game to watch.
