With all of the holiday and “just because” get-togethers that happen in the summertime, you’re bound to be asked to bring a side dish or two to a backyard barbecue. As much as I love freshly made sides, like grilled corn, potlucks usually call for dishes that can be made ahead of time and “en masse”.
I’ve always been the guest who brings a big bowl of pasta salad, but I’ve started to turn more to quinoa salads, slaws and even grated cauliflower salads, along with occasional green salad, which I typically pack with all sorts of summertime veggies (like in my Ultimate Summer Salad).
So, whether you lean along the lines of pasta, or prefer salads that are lower on the carb scale, there’s something here for everyone. And there isn’t a single mayo-based salad in the bunch!
