It’s time to shake things up in the lunchbox department! These 5 pinwheel sandwiches will be a hit with kids and adults alike.
I realize it’s only October, but we’ve come that point where my kids have reached the “point of no return” with lunchbox sandwiches. Even bagels with cream cheese and jam, which they proclaimed to be an awesome lunchtime treat just weeks ago have become “same old, same old”. Since my kids make their own lunches the night before to save time in the mornings, they went into autopilot when it came to lunchtime creativity. Really, who can blame them? I know that my creativity level is at 10% (and dropping) in the evening.
It was time for a lunchbox intervention, so I pulled out the tortillas and came up with some easy pinwheel sandwich ideas to freshen things up.
The combination you see above is salsa, sliced black olives (a favorite for my boys) and sliced red bell pepper. You can make this roll-up in about two minutes flat, and it’s a welcome change from the usual ham and cheese combinations.

My daughter has surprisingly only had one sandwich this year! I have become prone to sending leftover dinner with her each day (and trying to come up with something better than pasta since she would eat that every day!)
