Every cookbook about vegetables was open wide, thumbed through over and over, feeding my spring-born determination to eat everything that is fresh and healthy. Some of my favorites are Vegetarian Cooking for Everyone by Deborah Madison, Plenty: Vibrant Vegetable Recipes from London’s Ottolenghi and The Glorious Vegetables of Italy by Domenica Marchetti.
