Springtime is the time to pull out the fresh fruits and vegetables! Salad, desserts, side dishes, snacks…bring on the asparagus, cauliflower and strawberries in these healthy recipes!
Over the past couple of days, cookbooks were strewn across our family room coffee table. Every cookbook about vegetables was open wide, thumbed through over and over, feeding my spring-born determination to eat everything that is fresh and healthy. Springtime is about fresh and seasonal produce, such as asparagus, cauliflower and strawberries, and the promise of summertime fruits and vegetables that are just around the corner.
Really fresh vegetables and fruits don’t need fancy preparations because their natural flavors shine through. That being said, one of the joys of cooking is playing around with fresh herbs, spices and simple vinaigrettes. A little fresh thyme, a sprinkle of curry powder there. Play to your heart’s content!
