With Christmas just a few days away, there are about 14 different lists scattered over our kitchen table and island. Neighbor gift list, Christmas dinner menu and Christmas morning breakfast ideas, to name a few. With the joyful chaos of Christmas morning, breakfast needs to be simple – there’s no way that I’m going to miss out on all of the fun while in the kitchen! We have it narrowed down to a few family favorites, which includes fresh croissants from the local bakery (with jam, of course), fresh fruit and a make-ahead breakfast casserole.
If you’re looking for make-ahead ideas to keep Christmas morning easy and fun, here’s a list of 11 (I just couldn’t narrow it down to 10) of my favorite healthy make-ahead breakfast recipes.

Healthy Make-Ahead Breakfast Recipes
If you don’t have any ramekins in your kitchen, go buy some! They are perfect for egg bakes, like this Make-Ahead Baked Egg Recipe with Turkey Sausage, Mushrooms & Tomatoes. Do the prep the night before, then pop these in the oven for 20 minutes before serving. Easy peasy.
This Strawberry & Mango Fruit Salad is so quick and easy that you almost don’t need to make it ahead of time. This recipe was inspired by the many fruit salads my mum made when I was growing up. They were always a fresh, welcome addition to the meal.
You just can’t go wrong with broccoli and feta, and this easy Baked Egg, Broccoli & Feta Breakfast Casserole makes the case for me within the first bite. A dash of smoked paprika and fluffy eggs don’t hurt my argument, either.
And then there was the time that I make this Skinny Southwestern Crustless Quiche and discovered that the black beans would sink to the bottom and form a kind of pseudo-crust. Cool looking and tasty!
My husband’s cousin (our scone queen!) taught me to make these Healthy(er) Scones with Chocolate & Crystallized Ginger a few years ago, and they have been a favorite ever since. The beauty of these scones is that you can make the dough, form the scones, then freeze. All you have to do in the morning is pop the frozen scone in the oven to bake.

Whether it’s the middle of winter or the start of summer, the bright flavor of lemon in these Lemon & Cherry Whole Wheat Scones is always a great way to start the day.
We made this Skinny Sausage & Egg Breakfast Casserole for Christmas breakfast a couple of years in a row. It was wonderful to wake up to a meal that only needed an easy assembly and a quick turn in the oven.
When you read “pumpkin”, you might think of autumn, but I promise that these Whole Wheat Pumpkin Spice Latte Muffins are a treat for breakfast or snack time all year round!
