Easy dinner prep, here we come! Instant Pot soups, most using pantry staples, are the name of the game right now! Here are some of our favorites.
These healthy Instant Pot soup recipes have saved me on so many busy nights that I've lost count!
When friends ask me if it's really worth it to buy an Instant Pot, I answer with a resounding, "Yes!" I understand the hesitation - "Is it worth the storage space?", "Will I really use it that often?", "I'm worried I'm going to blow up the kitchen." I get it because I had all of the same thoughts when I first thought of buying an electric pressure cooker.
But let me tell you, I pull out my trusty Instant Pot at least once a week, many times more often than that.
Hard boiled eggs, shredded chicken (straight from frozen!) for meal prep, stews, chilis and curries are things I make regularly. But it's the healthy soup recipes that I tend to make over and over again. Quick, easy, comforting and nutritious, there are endless variations you can make, from thick and creamy to light and brothy.
Which Instant Pot to buy:
- If you haven't yet purchased an Instant Pot and are looking for recommendations, this is the one (affiliate) that I have.
- The 6-quart size is just right for us. I can make a large batch of soup, with leftovers to spare, with no problem.
- For our family of four, the 8-quart is a little big and takes up slightly more storage space, but it's a good option if you're cooking for more people.
- The 3-quart Instant Pot (affiliate) is a good option for single users or couples, or for situations where you have less space, like in a shared apartment or even an RV.
Tips for Making Instant Pot Soups:
- You can prepare almost any kind of stew or soup in your electric pressure cooker, from vegetarian to chicken-based and beyond.
- If using chicken in your soup, you can use either frozen or fresh chicken thighs or breasts. That’s right…frozen chicken can go straight into the Instant Pot! The cooking time stays the same, but when using frozen meat, it will take a little longer for the Instant Pot to come to pressure.
- In many of the soups you see here, the recipes come together in two parts: 1) Sautéing the aromatics (onions, garlic, carrots, etc.) on the Sauté mode and 2) Add the rest of ingredients and cooking it all at pressure.
- For most soups, particularly they include chicken, I use natural release for 10 minutes., then quick release. This all occurs at the end of the cooking time.
- As with any soups, herbs and spices are your friends. Add them liberally to boost flavor. Stirring in some fresh parsley, cilantro or basil just before serving can do wonders, too!
