Healthy dinner ideas are a must for keeping me on track during the week. Last night I resorted to canned soup. I could pretend that I was being a good mum, serving something that went down easily for my son who recently got braces. The truth of the matter is that I was running on empty and couldn’t muster the motivation to do anything but open open a can and turn on a burner or two. We all have those days, right?
Busy days require easy dinner recipes and I get embarrassingly giddy when I come up with a new recipe that takes 30 minutes (give or take 5 minutes) to pull together.
